about us

The journey for ‘Origins of Bellata’ began in a northern NSW country town called Bellata, with a 100 year old woodfired oven, timber shaping bench and a passion to bake the perfect loaf of sourdough bread.

Our loaves have been thoughtfully made using time-honoured and authentic artisan techniques. Crafted with over 90% Australian sourced ingredients in every loaf, our bread is handmade by our passionate bakers.

The result — a distinguished taste with a crisp crust and full flavour.

Our RANGE

 

White Semolina Sourdough

Description
Traditional white sourdough, made with our natural culture, offering a balanced flavour with a single subtle sour undertone.

Aroma 
Fresh, wheaty, slightly sour crumb, crust does not smell burned

Flavour 
Slightly sour taste on the crumb with a slight sweetness of the crust

Texture 
Chewy, crunchy crust, light airy crumb

 

CRACKED WHEAT SOURDOUGH

Description
Torpedo-shape, dark golden in colour with cracked wheat folded through.

Aroma
Fresh wheaty, seedy/earthy aroma

Flavour
Light sour taste with a slight sweet note

Texture
Chewy. Toasted crust, Light airy crumb with slightly crunchy seeds

 

SOY LINSEED Sourdough

Description
A classic white sourdough, folded through with whole pre soaked soybeans and linseeds.

Aroma 
Fresh, wheaty, seedy/earthy aroma

Flavour 
Wheaty, light sour taste with a slight sweet tone to it

Texture 
Chewy, crunchy crust, light airy crumb

 

Manzanillo olive SOURDOUGH

Description
Studded with manzanillo olives, this chewy and open-textured loaf is crisp and fragrant.

Aroma 
Fresh, wheaty, seedy/earthy aroma

Flavour 
Wheaty, light sour taste with a slight sweet tone to it.with the taste of fresh olives

Texture 
Chewy, toasted crust, light airy crumb, slight chewy
